It is possible to substitute olive oil for butter or margarine when baking your favourite cake. Olive oil creates a rich, dense cake that melts in your mouth.

Delicious Carrot Cake
1 cup wholemeal flour 2 teaspoons baking powder 1/4 teaspoon salt 1 cup Allambie Grove extra virgin olive oil 1 cup flour 3 cups grated carrot 1 cup raw sugar 2 teaspoons cinnamon 4 beaten eggs Sift and mix dry ingredients. Add oil and stir well. Stir in beaten eggs, then add carrot, mix thoroughly. Place in large round cake tin. Bake in moderate oven for approximately 45 mins- 1 hour. Ice with cream cheese icing when cool. Icing Blend together 120g cream cheese, 60g butter. 1 teaspoon of vanilla and 2 cups sifted icing sugar until smooth. Spread over the cooled carrot cake. Sensational Summer Salad This sensational summer salad is a quick and easy crowd pleaser. Try substituting your own favourite ingredients to make it exactly to your taste. Ingredients A few diced baby beets 150g Danish Feta cubed 2-3 sundried tomatoes (optional) 2/3 punnet cherry or grape tomatoes A generous handful of baby spinach leaves A generous handful of rocket leaves Diced avocado (optional) Dressing 1 tablespoon Allambie Grove Extra Virgin Olive Oil 1 tablespoon Balsamic Vinegar Method Place salad ingredients into large serving bowl. Mix dressing ingredients separately. Add dressing to salad toss and serve.
